There are a few different layouts for the Outlook Today screen. Changing how yours looks is easy.

If you look around the Outlook Today screen, you will find an area that says Customize Outlook Today ...All you need to do is to click on that link to change many of the aspects of the Outlook Today screen, including it's appearance.
